We continue with the daily presentation of our 11 cuvées

The Bouché plateau is a very interesting terroir, characterised by a high proportion of clay, ochre-coloured clay that gave its name to this cuvée.
The old-vine parcel is co-planted with Sémillon, Sauvignon and Sauvignon Gris. It is always a real puzzle deciding when to pick, so generally, we wait, and wait...
This parcel is hand-harvested for 12 months of ageing in amphorae. A barrel also accommodated the remaining juice that the two amphorae could not hold.
The result is rich, ripe, and beautifully complex. Probably our greatest white wine of the vintage.
To drink now or in 20 years. As the saying goes, a great wine can be enjoyed at any age!
