We continue with the presentation of our 2019 cuvées

Today, the single-plot cuvée, Les Galets de Cazebonne, a pure Cabernet Sauvignon aged for 5 months in amphorae.
This wine was awarded a score of 16/20 in La Revue du Vin de France, with the tasting note: ‘a tender edge, a floral, incisive profile, a delicate flavour of redcurrant. Highly original yet perfectly poised, in its airy and expressive style, this pure Cabernet Sauvignon was aged in terracotta and stoneware jars.’
We are continuing our learning journey with amphorae; choosing the right amphora for each batch is by no means easy. Which grape variety, which batch will benefit from gentle micro-oxygenation (in more porous terracotta, for instance) or, conversely, express itself better in less permeable stoneware? In the end, it is not such a simple question. We experiment, we learn, but with this cuvée, we have certainly found the right balance.
