Yesterday morning's analysis of our forgotten grape varieties

This second harvest is interesting for us as it reflects more of a classic vintage profile, in contrast to the 2020 harvest, marked by a solar year.
However, it confirms last year's analyses on our Graves soils.
Castets is a grape variety that achieves high alcohol levels with rather high pH (we were above 4 last year).
Bouchalès and Jurançon noir do not reach high alcohol levels, and the former is marked by high acidity.
Saint-Macaire balances its high alcohol level with distinct acidity.
Upon tasting, Saint-Macaire and Castets show greater complexity, although the fruit profile of Bouchalès is quite remarkable.
We brought in the Jurançon noir yesterday. We will continue on Monday with Castets and monitor the other grape varieties to see how far we can push them.
We also have a number of grape varieties to taste from the first bunches, though we certainly will not harvest them due to lack of sufficient volume.
If we avoid adverse weather events in 2022, we should begin harvesting some very interesting fruit.
