Yesterday, we re-tasted all our batches of forgotten grape varieties to monitor their ageing

We are very enthusiastic about this vintage, in both white and red. The Bouchalès pictured will be used in the blend for the Comme en 1900 cuvée. It enhances this cuvée by boosting its top notes with its expressive fruitiness, while also contributing to the wine's structure by bringing an ever-welcome freshness! We'll see if we have enough left over to produce a few hundred single-varietal bottles, just so you can have a taste!
