At Château Cazebonne, our white wines are an invitation to explore the aromatic richness and freshness that characterise the fine wines of Bordeaux. Sourced from carefully selected parcels and crafted with artisanal precision, they embody our commitment to organic viticulture and respect for each unique terroir.
From the vineyard to the cellar, every step is designed to preserve the natural expression of our grape varieties. Our clay-limestone soils impart a distinctive minerality to our white wines, while the optimal sun exposure on the estate's slopes fosters balanced grape ripening, ensuring complex aromas and vibrant acidity.
Whether crafted for youthful enjoyment—bursting with vivacity and fruit-forward notes—or as more complex wines designed for patient bottle ageing that will reveal deeper nuances and silky textures, our whites are tailored to delight the most discerning palates. They reflect our passion and craftsmanship, combining Bordeaux tradition with innovation.
By tasting a white wine from Cazebonne, you discover the authentic expression of an exceptional terroir. You also support our pioneering endeavour to replant Bordeaux’s forgotten grape varieties. As Jean-Baptiste Duquesne illustrates in his book "Bordeaux, une histoire de cépages", numerous white varieties, once emblematic of the region, have disappeared over time. We strive to bring these genetic treasures back to life in order to explore new harmonies of flavour and preserve an invaluable viticultural heritage. This long-term endeavour is made possible thanks to the steadfast support of the many wine lovers who have embraced our wines and share our vision.
To deepen your knowledge of the fascinating history of Bordeaux grape varieties and learn more about these rediscovered varieties, we invite you to receive the digital edition of the book "Bordeaux, une histoire de cépages", published by Éditions BBD and written by Jean-Baptiste Duquesne.
The production of our white wines is rooted in Bordeaux winemaking tradition, enhanced by modern organic farming practices. Every vinification is a delicate process aimed at elevating the specific characteristics of each vintage and the distinct imprint of our terroir. We favour a gentle approach, from hand-harvesting to maturation, to preserve the purity of the aromas and the natural structure of the wines.
Our traditional white grape varieties, such as Sauvignon and Sémillon, alongside several lost Bordeaux varieties that we are reintroducing, are cultivated with meticulous care. Their diversity offers a rich aromatic palette, ranging from citrus and exotic fruit notes in their youth, to more complex aromas of honey, dried fruit, and toasted notes in age-worthy wines.
Each vintage brings its own unique character to our white wines. The year's weather conditions, from winter through to summer, directly influence grape ripeness and, consequently, the aromatic profile and structure of the wines. Our winemakers work in close harmony with nature to adapt viticultural and vinification techniques, bringing out the very best from each harvest. Whether marked by crisp, invigorating freshness or by opulent richness, our white wines reflect the individuality of their vintage year.
Situated on a clay-limestone terroir, Château Cazebonne benefits from a privileged geographical setting ideal for the production of fine white wines. The composition of our soils, rich in limestone, ensures excellent drainage and imparts a distinctive minerality and fine tension to the wines. This typicity is complemented by optimal sun exposure that fosters ideal phenolic ripeness in the grapes—essential for the balance and complexity of our cuvées. Respect for this terroir lies at the heart of our philosophy, guiding our vineyard management and winemaking decisions.
White winemaking at Cazebonne is a meticulous process, from grape intake to bottling. Following rigorous hand-harvesting, the grapes are gently pressed to extract the finest juices. Fermentation takes place at low temperatures to preserve freshness and aromatic finesse. Maturation may take place in stainless steel vats, amphorae, or oak barrels, depending on the cuvée and the desired profile. This choice is vital for refining textures, developing aromatic complexity, and ensuring the ageing potential of our white wines. We also carry out bâtonnage (lees stirring) on selected cuvées to bring roundness and body to the palate.
Our white wines are distinguished by their remarkable balance, combining freshness, concentration, and fine aromatic complexity. On the nose, they reveal bouquets of orchard fruits, citrus, and spring flowers, often accompanied by mineral notes or subtle oak nuances from maturation. On the palate, their vivacity pairs with a generous texture and a lingering finish, displaying the richness of their terroir and the precision of their crafting. They are both elegant and expressive, offering a memorable tasting experience.
The white wines of Château Cazebonne make ideal companions for a wide range of dishes. Their freshness and complexity pair perfectly with seafood, grilled or sauced fish, and poultry. They also enhance fresh goat's cheeses, crisp salads, and can accompany more sophisticated dishes such as a mushroom risotto. Richer, barrel-aged cuvées match harmoniously with heartier fare, such as white meats in creamy sauces or fine fish.
This enduring work, particularly the reintroduction of forgotten grape varieties, is made possible thanks to the unwavering support of the many wine enthusiasts who have embraced our wines and share our vision. We invite you to explore the richness of these grape varieties, including those in Le Grand Vin de Cazebonne and the Peyron-Bouché cuvée in the book "Bordeaux, une histoire de cépages".
