The Muré family in Alsace or Jean-Baptiste Duquesne at Château Cazebonne, in Graves, near Bordeaux: here are winemakers seeking to revive forgotten grape varieties. In Bordeaux, praise is given to the work of the Cazebonne winegrower, who decided to look beyond the five grape varieties cultivated in Bordeaux for the past century. One must taste his cuvée Comme en 1900, crafted from Mancin, Castets, Saint-Macaire and Petit Verdot—varieties whose very names had been forgotten. A fine, mouth-watering wine that allows us to rediscover flavours lost over time.
