Château Cazebonne's "Comme en 1900" cuvée is a true exploration of the forgotten flavours of the Bordeaux vineyard. It embodies the desire to revive the grape varieties and techniques of a bygone era, offering a unique tasting experience and a living testament to the region's winemaking history. This flagship cuvée is the expression of a deep commitment to biodiversity and ampelographic heritage.
The blend of the "Comme en 1900" cuvée varies from vintage to vintage, reflecting the diversity of the heritage grape varieties replanted in Bordeaux. Each year, the Château Cazebonne team strives to select the finest expressions of these forgotten varieties to craft a wine that pays tribute to the taste of historic Bordeaux. The goal is to offer vibrant, floral, and spicy wines capable of surprising and captivating wine lovers in search of originality.
The 2022 vintage of the red cuvée received particular acclaim, notably from *La Revue du Vin de France*, which awarded it a score of 92/100. This daring blend comprised Mancin (45%), Castets (25%), Saint-Macaire (10%), and Petit Verdot (10%), alongside Bouchalès and Jurançon Noir. Hand-harvesting took place from 22 September to 13 October 2022, allowing grapes to be picked at perfect ripeness. The result is a wine of remarkable finesse, with explosive fruit and mouth-watering freshness, displaying notes of potpourri, cinnamon, and peach that invite a genuine sensory journey. The 2022 vintage in Bordeaux shows great promise, with Mancin as the backbone, complemented by Saint-Macaire providing structure and complexity.
The wines of the "Comme en 1900" cuvée benefit from meticulous ageing. The reds spend 12 months in amphorae and oak barrels, which imparts a silky texture, supple tannins, and heightened aromatic complexity. For the white version, Sauvignon Gris is often in the spotlight, delivering a profile balanced between saline freshness and generous roundness, with notes of citrus fruit, guava, and a saline finish, complemented by oak-derived coconut aromas following judicious maturation.
The red "Comme en 1900" cuvée stands out for its floral and spicy notes, vibrant character, and delicate structure. It is a wonderfully digestible, fruit-forward wine that calls for pairing with flavourful dishes. It will pair exquisitely with roast spiced squab pigeon, dry-aged rib of beef, wild boar stew (daube), or duck breast with cherries. Characterful cheeses, such as Saint-Nectaire, will also make perfect matches.
The white version of "Comme en 1900" offers a rich and balanced aromatic profile. It reveals notes of citrus fruit and guava, a fresh palate with subtle richness, and a saline finish. These characteristics make it an excellent partner for fish in sauce, exotic cuisine, grilled poultry, mature cheeses, or seafood risotto.
Through the revival of these heritage grape varieties, Château Cazebonne demonstrates its dedication to preserving Bordeaux's viticultural heritage.
