A Plea for 5% Total Freedom for Winemakers

I advocate for 5% total freedom within my vineyard.
Winemakers need AOCs to sell their wines. It is a powerful collective brand, widely recognised by many consumers.
AOCs are evolving, notably with VIFA, but very slowly – too slowly. Far slower than climate change and shifts in consumer habits.
This is why I am making this plea.
Why not grant winemakers 5% total freedom?
This wouldn't compromise our appellations, but it would enable us to learn much more quickly.
