Two years ago, Benoit Périssé took over vines in the Bergeracois region. Among these parcels, he managed to identify 20 ares planted with Bouchalès, locally known as Grappu. It is incredibly enriching for us to learn from his vinification trials, and to discover that Bouchalès is a grape variety with a lovely colour, best harvested fully ripe at the end of September. In the end, it yields a wine that is low in alcohol and bursting with fruit. One can easily understand why it was abandoned, as it did not produce enough alcohol (around 9% ABV in the 19th century). All of this is particularly interesting in the face of global warming, which threatens us a little more each day. We look forward to visiting Benoit to taste his first cuvées.
