Bordeaux: yesterday's grape varieties won't be tomorrow's

Faced with climatic challenges, we have a duty to question our practices.
For over ten years, we have been exploring the potential of our region's forgotten grape varieties. These ancient varieties, such as Bouchalès or Jurançon noir, offer natural solutions to current imbalances: improved resistance, preserved acidity, and aromatic freshness.
In this article, I question what makes a grape variety suitable for a terroir, leading me to conclude that we are compelled to evolve the varietal composition of our vineyards, in all regions.
