Bouchalès: the view of Nicolas Jamin, who advises us: 'Small bunches and small berries, concentrated, peppery and tangy fruit

As the Bouchalès harvest was very low at Cazebonne in 2020, I am basing my opinion on the wines of Frédéric Mallier at Château de la Vieille Chapelle, who in certain years produces a 100% Bouchalès that I enjoy very much.
The aromatics are fresh, with notes of raspberry and pepper; the palate is dense, concentrated and tangy, with crystalline tannins.
For me, this is a grape variety with tremendous qualitative potential, entirely in keeping with the spirit of the work at Cazebonne.
A grape variety that develops both lovely fresh, fruity aromatics, a fine tannic structure that is dense yet supple, and bright acidity, should also certainly be of interest to Bordeaux winegrowers.'
