Densities between 993 and 1000 on our whites
We are very close to the end of fermentation. We will run analyses to confirm this.
All with natural yeasts.
It is going wonderfully on the whites this year.
And for the reds, our first vat of Merlot, harvested on Monday, started fermenting yesterday.
