Tasting of all the batches and clever calculations to see how to blend ahead of our late June bottlings

We are going to bottle the cuvée Entre amis rouge 2019.
For the single-plot whites, we will certainly have to wait a little longer. Some amphorae and barrels still have residual sugars and we will need to let the fermentations finish.
This is one of the characteristics of vinification with indigenous yeasts. You cannot totally control the timing. We had no problems with the reds, but with the whites, it is more complicated, even though our nitrogen levels in the juices were good.
Perhaps our settling process was too long. Food for thought for next year.
The good news is that with the return of warmer weather, fermentations are starting to pick up again. There is a gentle fizzing in the vats. If all goes well, we will bottle at the end of August and we cannot wait for you to taste them, because they are delicious.
