The Merlots are evolving rapidly with this Indian summer

Monday's analyses show sugar levels between 12 and 13 degrees depending on the plots, pH levels around 3.4, disparate total acidities between 3 and 5, and malic acid around 3.
In short, not straightforward: it is not fully ripe, but the freshness is still there, and acidity levels are dropping very quickly at the moment.
Harvesting is all about making choices. So tomorrow, we will begin with the most advanced plots for our cuvée Entre amis, in order to preserve freshness in this fruit-driven cuvée. For the rest, we will wait until next week, even if it means not destemming everything before vatting. But at this rate, we will bring in our 5 hectares of Merlot very quickly. The Malbecs and Cabernet Franc will follow soon after.
For the Cabernet Sauvignon, we still have a bit of time. The warm weather forecast for the next 10 days (above 30 degrees during the day) will allow us to achieve perfect tannin ripeness. There too, we must avoid pushing it too far. Always the right balance.
