Harvested fully ripe, this Sauvignon underwent 12 months of ageing. It was bottled on 15 October. In a blind tasting, it will certainly not be easy to guess where it comes from. On Thursday, a visiting wine merchant praised its minerality, which reminded him of Chardonnay. Yet it is simply a terroir-driven Sauvignon, aged on its lees and fermented with indigenous yeasts!
