We sowed our cover crops last week and in less than 5 days, they are already emerging

A very good sign. Add the weekend rain and remarkably mild temperatures, and it promises very successful seedlings. We sowed 60kg per hectare of field beans, vetch, oats, and heritage grains. We increased the proportion of legumes this year in order to fix nitrogen in the soil and help the vines restart in the spring after the hailstorm they suffered. All that remains is to sow the plot on which we will be planting after the spring.
