Low-intervention winemaking is a philosophy that guides the work at Château Cazebonne, placing respect for the grapes and the expression of the terroir at the heart of every step. Rather than "manufacturing" wine, we seek to support it, to reveal its intrinsic potential by limiting manipulation and additions.
The main objective of this approach is to allow nature to express itself fully. By minimising interventions, we enable grapes, from living soils and rich biodiversity, to retain their original aromas and varietal characteristics. This results in more authentic wines that faithfully reflect the identity of their vintage and their place of origin. It is an approach rooted in a long viticultural tradition where the art of winemaking lay in observation and subtle gestures.
Be careful, do not confuse letting go with doing nothing: "low-intervention" does not mean "no intervention"! On the contrary, it demands heightened vigilance and impeccable technical precision. The winemaker's role is then that of a guardian: monitoring the alcoholic fermentation, ensuring rigorous cleanliness of facilities (vats, presses, utensils), and intervening in a targeted manner only when necessary to preserve the wine's quality and stability. It's about guiding the wine in its "own life" without constraining it, relying on healthy practices to avoid defects, as ancient winemaking treatises already emphasised.
This philosophy extends to wine ageing and bottling. At Château Cazebonne, we are committed to limiting the use of oenological additives as much as possible. This includes the choice of indigenous yeasts, when grape quality allows, and a very measured use of sulphur, to preserve aromatic vitality. Some of our cuvées, such as our no-added-sulphur cuvée, are the perfect illustration of this quest for purity and naturalness. This is our way of offering you wines that express the fruit, freshness, and complexity of great Bordeaux wines, true to our commitment to respectful viticulture.
This long-term work, particularly the relearning and replanting of forgotten grape varieties in Bordeaux, is made possible thanks to the support of enthusiasts who have embraced our wines.
