This low-intervention winemaking approach aims to allow the grapes and the natural process to express themselves fully, offering a unique tasting experience that respects the fruit and its environment.
Sulphur, or sulphur dioxide (SO2), is a historic ally in oenology, renowned for its antioxidant and antiseptic properties. Doing without it means facing considerable difficulties. Without its protective role, the wine is particularly vulnerable to oxidation, which can alter its colour, bouquet, and flavour. Similarly, the risk of developing microbiological deviations (acetic bacteria, undesirable yeasts) is increased, threatening the wine's stability and quality.
To succeed in sulphur-free winemaking, strict conditions are imperative. The raw material must be impeccable: a very healthy harvest is non-negotiable, as the slightest presence of rot or undesirable microorganisms can compromise the entire process. Managing pH conditions is also crucial, with a low pH offering increased natural protection. Finally, impeccable hygiene in the cellar, particularly during rackings, is essential to prevent any contamination.
The ideal of "zero added sulphur" is ambitious, but experience shows that a pragmatic approach is often the wisest to guarantee the quality and longevity of the wine. As the old adage goes, "it's better to add a little sulphur before bottling than to have deviations afterwards". This means that, if there is any doubt about the wine's future stability, a minimal addition of SO2, just before bottling, can prevent irreversible alterations. This decision, made after rigorous monitoring and precise analyses, ensures that the wine will reach the consumer in optimal condition, without betraying the spirit of an organic wine estate and respectful production.
