Today we conclude the presentation of our 11 cuvées with the Parcellaire Duo de Darche-Cazebonne cuvée
A blend of two batches aged in amphorae: terracotta for the Merlots from Darche, stoneware for the Cabernet Sauvignons from Cazebonne.
One year of ageing without sulphur, on the lees, prior to blending and bottling. Light addition of volcanic sulphur before bottling, which should bring total sulphur to around 30mg.
The Bordeaux blend revisited in amphorae. A truly lovely bottle!
