At Château Cazebonne, the connection between food and wine is much more than a mere tradition; it is ingrained in the very DNA of the estate. Before breathing new life into our Bordeaux vines, Jean-Baptiste, co-founder of Château Cazebonne, successfully launched the iconic recipe website 750g.com alongside his brother, Chef Damien. This culinary adventure is a testament to Jean-Baptiste's deep passion for taste, flavours, and sharing—values that we find today in every bottle of Château Cazebonne.
Wine, especially in Bordeaux, is not just a drink; it is the soul of a meal, a catalyst for conversation, and the ideal companion for memorable moments. For us, every grape variety and every vintage tells a story that pairs beautifully with the simplest as well as the most elaborate dishes. We could spend hours talking to you about food and wine pairings, the aromatic subtleties that reveal themselves when paired with a particular dish, and the balance to be struck between acidity, tannins, and flavours to elevate the tasting experience.
This culinary and viticultural philosophy goes hand in hand with a strong commitment on our part: the preservation and revival of Bordeaux's winegrowing heritage. Château Cazebonne has embarked on pioneering work, replanting ancient and forgotten grape varieties that once made our terroir so rich. This bold approach, detailing our history and the importance of grape varieties in the Bordeaux region, is indeed the central theme of the book "Bordeaux, une histoire de cépages" published by Éditions BBD and co-written by Jean-Baptiste Duquesne.
This revival is made possible by the enthusiasm and unwavering support of a community of enlightened wine lovers. It is thanks to you that we can bring these historic grape varieties back to life and introduce you to wines of rare authenticity. To explore our different cuvées and support our project, please do not hesitate to visit the Cazebonne shop. We also invite you to learn more about our approach and the history of Bordeaux grape varieties by receiving the digital version of "Bordeaux, une histoire de cépages" on our website.
The harmony between a dish and a wine is no coincidence, but rather the result of seeking balance and complementarity. Whether for a festive meal or a simple moment, the right choice of wine can transform the tasting experience. At Cazebonne, we explore the many facets of this alchemy, considering flavours, textures, and intensities to create successful combinations. The goal is to enhance both the dish and the wine, without one overpowering the other.
Each wine has a unique aromatic profile, shaped by the grape variety, the terroir, and the ageing process. To accompany a dish, it is essential to marry the aromas. For instance, a fresh and fruity wine can balance a rich dish, while a more structured, oaky wine will be the perfect partner for intensely flavoured foods. We favour wines that bring complexity and length on the palate, without masking the intrinsic qualities of the ingredients. The ancient grape varieties we cultivate provide aromatic nuances that are often unexpected, opening up new perspectives for pairings.
Our Cuvée Synergie, a blend of traditional Bordeaux grape varieties and ancient varieties, offers a beautiful structure with notes of red fruit and spices. It pairs wonderfully with grilled red meats or dishes in sauce. Its melted tannins and lingering finish make it an excellent companion for robust dishes.
For lighter dishes, such as fish or poultry in a cream sauce, our white "Comme un Goût de..." cuvée, made from forgotten white Bordeaux grape varieties, brings freshness and vivacity. Its floral aromas and citrus notes delicately highlight the flavours without weighing them down.
Serving temperature is crucial to fully reveal a wine's potential. A red wine served too warm can seem heavy and alcoholic, while a white wine served too cold will see its aromas close up. For our red wines, a temperature between 16 and 18°C is ideal. Aeration by decanting is often beneficial, particularly for our younger or more complex cuvées, allowing the aromas to open up and the tannins to soften. For white wines, a temperature of 10 to 12°C is recommended.
Beyond classic pairings, we encourage you to explore more daring combinations. Why not try one of our white wines with a bloomy rind cheese, or a light red wine with spicy vegetarian dishes? Food and wine pairing is above all a matter of personal taste and culinary adventure. The Pét'Nat' from Cazebonne can also bring a touch of originality to an apéritif or fruity desserts.
Our tip for a memorable pairing: match the earthy power of a wild mushroom dish with the subtle undergrowth notes of our Cuvée Synergie after a few years of cellaring. The tertiary aromas of the wine, developed over time, will echo the umami flavours of the mushrooms, creating an unforgettable tasting harmony. Feel free to ask any questions about pairings by contacting us.
At Château Cazebonne, we are committed to replanting the grape varieties that had disappeared from Bordeaux, a task made possible thanks to the support of the passionate wine lovers who have embraced our wines. It is this approach that drives our quest for diversity and authenticity, and we invite you to find out more by downloading the book "Bordeaux, une histoire de cépages" on our website, to test your knowledge with our oenological quizzes, or to explore the richness of our range by visiting our online shop or why not a Barbecue in the vines.
