Cadillac

The terroir

The Cadillac appellation is situated on the right bank of the Garonne, within the Entre-Deux-Mers winegrowing region. Its vineyards stretch across hillsides enjoying an exposure that favours the development of noble rot. The soils generally consist of clay-limestone and gravels over a limestone bedrock. This geological makeup contributes to the distinct character of the wines produced within this defined geographical area.

The wines

The Cadillac appellation is dedicated to the production of sweet white wines. The grape varieties permitted for their production are Sémillon, which must make up at least 70% of the blend, complemented by Sauvignon Blanc and Muscadelle. These wines are characterised by an aromatic richness dominated by notes of candied fruit and honey. Their balance is underpinned by an acidity that tempers their natural sweetness, achieved through the concentration of sugars by botrytis cinerea.

Food pairings

Cadillac wines are traditionally prized alongside specific dishes. They pair beautifully with starters such as foie gras, or at the end of a meal with fruit-based desserts and pastries. Their aromatic profile also allows for a match with certain blue cheeses. Served chilled, they offer a tasting experience that showcases their complexity without overwhelming the palate.
