Pignon is a grape variety whose name appears in historical texts, particularly in the 19th century. However, its identification is complex, as it could correspond to several different varieties. The diversity of grape varieties formerly grown in Gascogne and the Sud-Ouest makes it difficult to be certain of its exact ampelographic profile. Jean-Baptiste Duquesne addresses this complexity in his book "Bordeaux, une histoire de cépages", highlighting the difficulty of accurately tracing the history of certain grape varieties.
One of the hypotheses often put forward is that Pignon could be linked to the Pardotte grape variety. This similarity in names or characteristics suggests a possible confusion or a common local designation for closely related varieties. These "forgotten grape varieties" or "lost Bordeaux grape varieties" represent a whole part of regional wine history, and rediscovering them is crucial for a better understanding of Bordeaux's ancient plantings. Although Pignon is not officially listed with a clear ampelographic profile today, its mention bears witness to the past richness of the vineyard, particularly in bordering regions such as the Pyrénées, which we are also exploring through grape varieties like Lauzet or the Petit Péjac grape variety. Following the example of the research carried out on the Gascon grape variety, certain grape varieties such as Penouille are also mentioned in ancient documents and deserve particular attention.
By seeking to understand these ancient varieties, estates like Château Cazebonne are contributing to the "Bordeaux revival" by exploring archives and vineyards to reconstruct this historical ampelography and participate in the work of "winegrowers replanting forgotten grape varieties".
