It certainly gives food for thought

..
In our commune, around 1900, 25% Malbec, 50% Cabernet and Pardotte, 25% Mancin and Bouchalès.
Malbec has become very rare, only the Cabernets remain. We can estimate that only 40% of today's grape varieties resemble what once was.
Bordeaux has simplified its grape varieties at the expense of what was once a very rich diversity.
These are the flavours we want to rediscover, and why not offer a blend close to the wine of Saint-Pé in 1900.
